	VINTAGE CHEDDARS A portion of our fresh milk is taken to Challenge Australian Dairy in Capel where it is then processed for cheese production. By using traditional cheese making techniques our cheddar range has a unique full flavoured and creamy texture. At three months all of the bulk stored cheddar is evaluated for its quality. It is then that the very best cheese is stored for further maturation and after twelve months becomes the premium vintage cheddar which we can now offer you. Once mature, the natural flavours are incorporated in the cheeses according to their varieties and then each portion of cheese is individually hand-waxed and returned to our farm for labelling and distribution. We are very proud of our association with Challenge Dairy Co-operative and the harmonious relationship that we have established to offer the finest quality cheese that is 100% Western Australian owned and made.
