OUR FACILITIES

Early in 2005 we commenced construction of our on farm milk packaging facility, 'The Dairy Lounge', where we have gone to extreme measures to ensure that Bannister Downs Dairy offers superior quality milk to Western Australia. Our packaging facility is located less than 10 metres from where we milk our cows on our 90 stand rotary dairy (constructed in the year 2000). As fresh milk is collected it is transferred by a direct pipe across to where it is processed for packaging, only minutes after each cow is milked. We can proudly state this unique system is exclusive to Bannister Downs Farm in Western Australia. The benefits of this system can be tasted in our milk and boasts a longer, fresher life.

We pride ourselves on our premium herd which has been developed using the best bloodlines for over 10 years to result in cows with very high quality milk. Mathew manages the herd and will not compromise on their welfare.

Our dairy cows are milked morning and night and their fresh milk commences processing with a separation procedure, to ensure that the correct percentage of fat is consistently in all milk (Farm Fresh Milk - 3.2%, All Lite - less than 1%). Only the cream from our fresh milk is then homogenised to make sure that all solids are dispersed evenly.

In the final stage of processing the fresh milk is heat treated using a batch pasteurisation method. This allows a lower maximum temperature and decreases the destruction of milk proteins. The milk is heated to 63 degrees where it is held for 25 minutes, prior to a fast cooling process down to below 4 degrees that prevents any bacterial growth. At the point of pasteurisation, the homogenised cream is added to the batch according to the quantity required for the product being made.

Bannister Downs Fresh Milk is now ready for packaging. It is piped from a chilled holding vat, into a special room designated to meet superior hygiene levels, including a positive air pressure system, and a low ambient room temperature to prevent any opportunity for contamination or bacterial formation. Only processed milk is able to enter this room and it always leaves in a sealed pouch. Once packaged and sealed, the pouches of milk are placed in cartons and transferred to our chilled storage area, awaiting collection for distribution.

Where possible we maintain control over the distribution of our milk to your retail outlet and can guarantee our milk has been maintained in an optimal cold chain system. Our vehicles leave our premises loaded with fresh milk to supply shops within 1-2 hours of this same milk being harvested from our cows. Our processing system is fully closed from when our milk leaves our cows in the dairy, right up until it is sealed into its pouch packaging. This system avoids any unnecessary contact with air or other potential contaminants, and insures that we are able to offer the best quality fresh milk, with the longest shelf life.
